Last night I ate pizza. I relaxed my strict AIP and ventured into some new grains and more diary to enjoy a taste of the French Bread Mix from Better for You Bakery — and it was magnificent!
I’ve been meaning to get to the Siouxland Celiac Support Group at Hy-Vee on Hamilton Blvd. in Sioux City for months, maybe years, and finally attended!

I met Margo from the Siouxland Celiac blog, Hy-Vee’s dietician Corrinna and a bunch of new friends who also have to avoid gluten to stay healthy.
Tina from Better for You Bakery was the guest speaker and shared lots of great tips for baking gluten free, how her bakery in Jefferson, Iowa goes above and beyond to stay allergen-free and delighted the audience with her homemade chocolate CUPCAKES and Margarita pizza.
Corrinna made a no-bake cookie too!
