Mango Coconut Smoothie

mango coconut smoothie

I make smoothies often. They are a great substitute for a small meal when my stomach just doesn’t feel right (which is way too often due to Celiac Disease and inflammation from RA).

Yesterday for breakfast I wanted something sweet, tropical and without protein powder. I know. I’m livin’ on the edge!

So, I tossed together this combo: smoothie

  • 1 cup cubed frozen mango
  • 1/4 raw shredded coconut
  • approximately 10 frozen spinach leaves
  • 1 1/2 cups soy milk
  • cold water

I blended the first four ingredients in my single-serve blender. This makes a thick, shake-like consistency. Then I thinned it out with a little water so I could drink it with a straw. So yummy!
