Well, that flew by. It seems like just yesterday I was writing about my first ripe tomatoes of the season.
Later this week we are expecting two night of sub-freezing temperatures. That’ll end garden season in Northwest Iowa. So, last night I picked the garden clean and started to clear out the plants.
I have a big bowl of green bell peppers and green tomatoes waiting for me. I plan to dice and freeze some of the bell peppers to use in pasta and veggie omelets. A few will get stuffed with a rice mixture.
But, the green tomatoes? I’m hoping they will eventually ripen indoors and be eaten fresh. Otherwise, I might venture into finally trying fried green tomatoes. Are they any good?
How do you like to use up under ripe tomatoes?
Until next time,
Choose healthy!
