Today’s healthy decision will make an impact on each day this week. Food prep! With the hot, humid days of summer in full swing, all I really want to eat are cold salads. So, I decided to whip up a few random combinations to take to work for lunches this week. By preparing my lunches ahead of time, I’m less likely to stop for fast food or heat up a sodium-filled frozen meal.
I kept the process easy by buying grape tomatoes (no chopping), pre-made hard boiled eggs, a salad mix made of shredded cabbage, carrots, broccoli and cauliflower, and using a can of chickpeas (for protein).
The hubby is also food prepping tonight. He’s making a triple batch of fruit smoothies complete with vanilla protein powder to help us stay full until lunch time. They are so yummy! (We use Alton Brown’s recipe.)
